How to prepare Malabar Pork Fry:
Put the pork in boiling water before cooking. It is good for removing fat from meat. The meat doesn't melt too much. Add less chili powder and more black pepper powder
Pork- 1 kg
Chilli Powder - 3 teaspoons
Coriander Powder - 3 teaspoons
Turmeric Powder - 1 teaspoon
Meat Masala (Powder) - 2 teaspoons
Small Onion - 50 gms
Ginger- 25 grams
Green Chillies- 6 nos
Garlic- 2 cloves
Coconut Oil- 2 teaspoons
Curry Leaves- 2 blades
Salt- As needed
Black Pepper Powder (as needed)
Big Onion - 2
First of all chop the pork and wash it well. Add turmeric powder, chilli powder, black pepper powder, meat masala, garam masala and salt to it and mix it with a glass of water and take it when the cooker blows three whistles. The rest can be cooked while drying. Pour coconut oil in a saucepan and when it is hot, add onion, ginger, garlic and green chillies and saute well. After that, take the pork out of the cooker and cook it covered.
Fry until the pork is cooked well. After that, sprinkle pepper powder and add curry leaves and mix well and keep it. If you remove it, the fry will be pretty dry. It is very delicious. This is how dried pork is available in Malabar.
